The Terrace Cafe Chester County Mushroom Soup

one carrot

one/2 onion

2 stalks celery

one tablespoon butter or oil, moreover two tablespoons

melted butter or oil

2 lbs washed button mushrooms

1/two pound washed shiitake mushrooms

one particular/2 pound washed oyster mushrooms

1 tablespoon modern chopped tarragon

one teaspoon salt

1 teaspoon white pepper

three pints hen or vegetable inventory

1 pint weighty product

two tablespoons flour

Mince carrots, onions, and celery in a food items processor and sauté in massive pot with oil. Mince mushrooms in a foods processor, insert to pot together with with tarragon, salt, and pepper. Cook dinner evening meal for about fifteen minutes. Do not melt away.

Incorporate inventory and product and provide to a boil. Blend melted butter and flour right up until at last easy and whip into soup.
